The history of Champagne has seen the wine evolve from being a pale, pinkish still wine to the sparkling wine now associated with the region. The Romans were the first to plant vineyards in this area of northeast France. In France the first sparkling Champagne was created accidentally; the pressure in the bottle led it to be called "the devil's wine" (le vin du diable), as bottles exploded or corks popped. At the time, bubbles were considered a fault.
Nowadays Champagne is synonymous with celebration and having a good time with friends and family. Nothing says party quite like popping a bottle of bubbly. It seems that simply letting those bubbles fly sets the tone for a festive celebration.
